3-4 cups vegetables (we suggest 1 cup sliced red onion, 21/2 cups fresh green beans, 2 Tbsp. capers, 1/2 cup mixed olives, halved)
2 Tbsp. oil
1/2 cup plain yogurt
1/2 tsp. honey
Directions (Oven)
Preheat oven to 400º.
Reserve 2 tsp. Mediterranean Lemon Seasoning from packet for Lemon Herb Yogurt Sauce (see below).
In a bowl, toss shrimp and veggies with oil and seasoning.
Bake on sheet pan for 8 to 12 minutes, until shrimp is cooked through.
While shrimp is cooking, make sauce and refrigerate until ready to serve.
Directions (Air Fryer)
Cook seasoned shrimp and veggies in a 4-6 quart air fryer at 400º for 6 to 10 minutes, per air fryer directions. Follow preparation and seasoning directions from Oven method.
Make The Sauce
Mix 2 tsp. Mediterranean Lemon Seasoning with plain yogurt and honey. Drizzle sauce over meal.
