Our Blue Ribbon Method
Brine: In a medium pot, combine brine blend* with 2 cups water and bring to a boil for 5 minutes. Remove from heat, add 1/2 gallon cold water, and refrigerate until cool.
Place up to 8 lbs. of pork in the brine bag** and set in a pan for support. Pour cooled brine mix over pork. Add cold water if needed until fully submerged and seal bag tightly. Refrigerate for 2-4 hours.
*For meat under 4 lbs ., use half the brine blend with half the water listed.
**Do not use the brine bag on the grill!
Season: Remove pork from bag. Rinse thoroughly and pat dry. Drizzle with oil and sprinkle with Sweet & Smoky Pork Rub, distributing evenly.
Grill: Grill pork over medium heat until the internal temperature is 145ºF. Flip and rotate to avoid heavy charring. Brush with BBQ sauce for the last 2-3 minutes of grilling. Remove pork from grill and let rest for 10 minutes. Carve, serve, and enjoy.
